'Singapore imports over 90% of its food supply which leaves it vulnerable to trade and supply chain disruptions that can cause food prices to increase. The current COVID-19 pandemic acutely reflects Singapore’s vulnerability in food security with severe disruption in global supply chain. Technology innovations are needed to overcome these limitations and enhance food security in Singapore.   Prof William Chen\'s presentation covered the development of platform technology from the NTU Food Science & Technology Programme, focusing on innovations for food waste upcycling leading to a food circular economy. Some examples were: 1) sustainable natural food preservatives to extend shelf life of food produce resulting in reduced food waste generation; 2) nutrient recovery from food waste and the resulting wide spectrum of applications; 3) from-food-for-food biodegradable packaging materials resulting in food circular economy and solution for long term plastic waste reduction.'
